Attendees visited seedstock and cow-calf operations, a feedyard, the Klosterman Feedlot Innovation Center at the University of Nebraska-Lincoln and Cargill’s Schuyler processing facility. They also participated in hands-on culinary and meat science sessions to strengthen their understanding of lean beef cuts, preparation techniques and practical nutrition applications. But what mattered most was the transformation in knowledge and trust. Prior to the event, 95 percent of participants reported little to no background in agriculture. Afterward, more than three-quarters said they now had extensive knowledge of beef production – an outcome only possible through firsthand, boots-onthe-ground experience. Trust in beef’s safety, sustainability and animal care more than doubled across every measure. And perhaps most important, nine out of 10 dietitians left the program saying they now feel very comfortable recommending beef to patients and clients as part of a healthy diet. These are lasting outcomes. By engaging this group of trusted health professionals, we’ve extended beef’s story into exam rooms, classrooms, athletic training facilities and social media feeds nationwide. Their credibility and influence make beef’s message reach far beyond Nebraska’s borders. Nutrition Adventure also sets the stage for stronger national collaboration. The relationships built here are already serving as a resource not just for Nebraska, but for partner Beef Councils across the country. By hosting these professionals in our state, we’ve laid the groundwork for other councils to continue engaging them in future programs, multiplying the return on this investment of Checkoff dollars. In short, Nutrition Adventure isn’t just an event, it’s a catalyst. It proves that when we connect health professionals directly with cattle producers, scientists and real-world beef experiences, perceptions shift, trust is built and new advocates for beef emerge. That’s a win not just for Nebraska, but for the beef community nationwide. DIETETIC INTERN FARM TOUR: CONNECTING THE NEXT GENERATION We also hosted a farm-to-fork tour for dietetic interns from the University of Nebraska-Lincoln and the University of Nebraska Medical Center. These students are on the front lines of becoming tomorrow’s nutrition experts, and their understanding of food production will shape how they guide patients and communities throughout their careers. The tour mirrored the full beef lifecycle, with stops at cow-calf, feedyard and processing segments. A highlight was the meat science workshop, where students worked directly with beef cuts to deepen their understanding of lean options, portioning and preparation methods. Many interns admitted it was their first time seeing the production chain in such detail. The transparency of Nebraska’s beef community left a strong impression, equipping them to counsel future patients with facts instead of misconceptions.
